I was kind of wiped out after yesterday, so I made simple fajitas on the grille for dinner, once I returned from the track after the race. I had planned for this and had them marinating over night. They were awesome, with fresh tortillas and rice, a few fixin's from the garden.
(Men. I mean Real Men have to cook out on the grille on Memorial weekend, seriously!)
Fajitas and eggs made a fine breakfast wrapped in some tortillas.
Then I slept a bunch, glad I did not sunburn.
Then about five PM today I made thick burgers for us all and slow smoked three pounds of Polish sausage for later on this week. All wood was local oak smoke.
