the skin came out much crispier this time. the sauce is a cross between orange and peking sauce. We are also having roasted sweet potatoes, corn on the cob, salad and dinner rolls. Mashed potatoes were on the menu but cancelled - too many carbs. This menu was my partner's request. We might try some sake after the meal because we have mochi to go with it.

I started with this recipe but increased the temp by 25 degrees F and cooked the for 3.5 hours. I added soy sauce to the sauce packet and reduced the sauce before basting the with it. Basted it twice and put it under the broiler for about two minutes each time.
Now I have eaten a lot of and am sleepy.
