What's the difference between Jambalaya and Gumbo?
Gumbo is a (usually) chicken based soup served over a scoop of rice. The Cajuns will serve it over a scoop of potato salad. It can be (diced) chicken and sausage gumbo, seafood gumbo (usually shrimp) or Gumbo Z'herbes (made of 7 different greens in a vegetable stock and eaten on meatless days.)
Jambalaya is a tomato based rice dish that has chicken, ham, sausage, and/or shrimp in it. There are jambalayas made without the tomato base, and they are usually closer to dirty rice. Just depends on what kind your grandma made.
