Does the USA have organisations who can be advocating for you? Here there is an organisation who does that for free, and lots of people with a disability here do make use of them, because the rules and legislations around disability support, and other ways of support are so complicated that hardly any one gets through without that help in one go.
Don't know where you would be able to find out if there is something like that in the US, maybe other members know. Or that lady who should be helping you to learn to live on your own may know, or she may be of help to you in the appeal.
Further, a resume may help. Write down what you did when. How did you take care of yourself when you were in school. What are the things you can do, and how many of these things can you do combined. And, point out where your problems are.
Being able to go to school is one thing. Being able to cook another. But, being able to do both, does not mean that you can manage going to school, and afterwards cook for yourself on the same day too.
So, make an inventory for yourself where your problems are, also when tasks come together.
Hope you can get some support of that lady. I now realise November 15 is really soon. Getting support from an agency at such short notice will be hard.
Wishing you luck.
