It's much more accurate to use terminology to reflect that complexity, especially for things like gender.Nothing is black/white or 100% a binary in nature, even more so with humans because of our big meatbag brains.The very fact we can't all agree on this, or talk about it without breaking out long essays on the matter is ironically a demonstration of that.

We still have instincts, like irrational fears and fight/flight being some examples, just not to the extent compared to many other animals.We have to learn from others on how to survive, while many animals have the instincts to do so without much issue. We have long evolved past having those instincts, instead opting for experience.
