For the most part, yes. I've done my fair share of internet debating over the past 6-7 years, I don't think I'd have survived without a thick skin!

Thick skin is the best for chewing.
Maybe if you are making jerky out of someone so you can chew on them for hours. You would want tender flesh like veal for taste and consistency. I guess you like your steaks tough and you hate Filet Mignon. Tough skin has crushed capillaries and wouldn't be as bloody, thus not as juicy fleshwise.
