It's better after you cook it
I much prefer the cooked kinds, like kani and ebi and taco, for example.
It's insulting to Japanese people if you cook the kind that is meant to be eaten raw on the little Hibachi at your table, though.
Fuck them, if they feel insulted.
They are ones who have come to America, seeking fortune and freedom.
Eating in their restaurant is a supportive act. Eating it your way (accepting others for who they are, etc) is something they need to get used to.
You are absolutely right about that, DirtDawg. What I was thinking of was a little different, though.
My husband's company was bought by a Japanese company and the new owners took all their new employees out for Japanese food. Some of the guys complained about the sushi being served raw and they cooked it on top of the little Hibachi at their table. I think that it was either tuna or salmon. The owner of the company was a bit shocked by that and he never took them out again. My husband looked for the sushi he liked and ate it with gusto. He has been taken out several more times.
BTW, I just ate a chocolate chip cookie.

Not sure where the defensive nationalism came from at the time.
I have some of that, naturally, because I am am proud of ever so slightly more than half of my country's accomplishments, but I usually expect to only congratulate, quietly, instances of assimilation in newer immigrants, rather than spill it all over myself in view of my fellow Americans.
