Before sun up, I made an egg-heavy crepe batter and some cinnamon, pecan, apple filling. I cook one side almost crisp, flip them and spread the filling on. I make them smallish (four fit onto a small skillet sized griddle) and as they cook from the center of the pan, I roll them up towards the edge, over the filling.
They were cold when the kids awoke, but they were a big hit.
Yummm!
Oh, if you use a little water on the final fold, it will sort of re-seal into a containable mess.
... easier to eat that way.
