They all can. It depends on the "color temperature" that you want to capture. Many of the professional grade digital cameras are quite capable of capturing images, well past the typical visible spectrum. Accessing the images through software manipulation is also very easy.

It opens whole new worlds to the forensic scientist and amateur experimenter, alike.

It's more about how you adjust the colors. Increasing and decreasing gamma, contrast, brightness, saturation and hue will allow your camera to see  well beyond the visible spectrum. There is some science to bring into play, but it is still mostly art.
