I used to find that honey had a strong, unpleasant flavour, but I discovered it was just the hard, set honeys that I'd been brought up with that I didn't like. Rapeseed is grown around where I grew up, and it produces a honey that's high in dextrose, which gives it a hard, granular texture, and the honey has quite a harsh flavour. I like runny honeys, particularly dark, cloudy forest ones, since they tend to have a richer, deeper flavour than other honeys, and I find the texture of runny honeys more pleasant than set ones.
