Independence Day tradition as of this century, I smoked a good batch of meat for the week.
Pork Butt this time. We did the beef brisket on Saturday.
Also some smoked veggies; onions, carrots, peppers, corn and in a seperate Dutch pot, baked beans. Following my wife's heritage, adding some Texas to it. Did it outside with wood.
I cheated on the beans. I started with cooked northern beans from cans and flavored them with spices and smoke. Starting with cans saves about six or eight hours maintaining a Dutch oven.
I will stand up to all naysayers. My beans are delicious!
... and my daughter made dessert, inside. Peanut Butter Brownies!
