I finally mixed up the cucumber salad that we're serving tomorrow. Mixing the dressing closer to serving time should keep it from getting watery, as it did the last time. Here's hoping it will be delicious.
I can do upside down chocolate moo things!

Why not store the dressing separate from the cucumber and only mix it just before serving?

Why not store the dressing separate from the cucumber and only mix it just before serving? I'll see how it turns out this time,. and maybe next time I'll mix it at the last minute. Hopefully, the dressing will have had time to flavor the cucumbers without becoming watery. There's a balancing act. We have to do things a little ahead because of time pressure, so I didn't want to leave this for my boss to do on top of all her other stuff. At least it'll be better this time than it was last time.

I'm guessing it's the salt that's drawing the water out of the cucumbers. If it's not a pre-made mix, a last-minute addition of salt and a quick stir might do the trick.
