Pizza Pancakes

This is for the "manchildren" and cbc types in the group.

Recipe: Pizza Pancakes
Summary: A fun twist on pizza, using a basic pancakes recipe and adding favorite pizza toppings.

Ingredients
•2 cups Bisquick (baking mix)
•1 cup milk
•2 eggs
•3/4 cup shredded Italian (Pizza) cheese
•1/4 cup grated Parmesan cheese
•1/2 cup chopped or mini pepperoni
•2 teaspoon Italian seasoning
•1/4 teaspoon Garlic Salt
•Pizza sauce, for dipping
•Parmesan Cheese, garnish
Instructions
1.Heat griddle or skillet and grease, if necessary
2.In a large bowl, combine the Bisquick mix, Italian seasoning and garlic salt. Combine eggs and milk and stir into dry ingredients just until moistened. Fold in the cheeses and pepperoni.
3.Pour approximately 1/4 cup onto hot griddle, cook until bubbles form on top and edges are dry. Flip and cook until golden brown.
4.Cut pancakes with pizza cutter in to 4 triangles, garnish with Parmesan cheese, if desired, and serve with pizza sauce for dipping.
Quick notes
makes about 10-14 pancakes

Variations
substitute pepperoni, for meat of choice, such as hamburger, sausage, or bacon.

Preparation time: 5 minute(s)

Cooking time: 20 minute(s)

Number of servings (yield): 6

As it happens I googled Pizza pancakes and there are quite a few recipes.  I would probably add some chopped mushrooms, green pepper, etc.  You could even sneak in some shredded carrots as an extra veggie for the youngsters.   It sounds like a great sports party or late night snack.

honestly im not that good at making pancakes either :( Or an omelet or anything that required something to be kept in shape and flipped 

When I make such things, it usually ends up as pieces of what it should have been....but tastes good !

^^ I am also very particular with food. I don't like most things, and everything must be separate. My parents used to laugh at me when I was little for separating mixed veggies and taking my sandwiches apart and putting them back together before I ate.

Once read somewhere, lots of people are weird about their food being separate and not touching and it's because of those lunch trays in the schools with the divided sections. Makes some sense.
