Taking a break from cooking the Seafood Casserole for our Thanksgiving dinner and checking the computer. Thinking to check it after 20 minutes to see if is "bubbling and blaspheming" properly.......Yeah, I have too many Lovecraft lines bubbling in my brain.
Anyway, if it's properly bubbling and blaspheming I will remove the glass top off the casserole dish and let it cook uncovered for a nice golden crust. Only using raw shrimp and raw scallops without pre-cooked lobster this time. Lobsters are being overfished and twice cooked lobster and shrimp get pretty rubbery when cooked a second time. Plus, I learned a thing or two about seafood on our road trip to Cape Cod last month.
