How to make Garum
You will need: Some fish. Sardines are good, but any old bits will do - tails, innards, heads. A LOT of salt.
Some nice herbs. Ones with a strong smell are good, and a strong flavour's even better.
A large container.
Extremely tolerant neighbours.
Method: Mix the fish and the herbs together.
Put a layer of fish goo in the container.
Add a thick layer of salt.
Keep layering fish goo and salt until it's all used up.
Leave it out in the sun for several days.
(The strong smell is unpleasant, but normal.)
Gradually it will turn liquid. (It will stink)
Pound the whole lot together into a thick moosh.
Give it a good mixing every day. (The whole neighbourhood will stink.)
Lock your door. The neighbours will be banging on it demanding to know what's died in your house.
