Love uncooked walnuts, hazelnuts, almonds. Not too big a fan of raw cashews. Like them a lot better roasted.
It's great to taste how taste of freshly harvested walnuts changes through the weeks after gathering. Drying it gets sweeter and nuttier every day.
It's becoming more and more a quest, to find raw almonds. Shame.
