Hutspot looks good, the evaporated milk would make it sweet too. We never had plain mashed potatoes, so it's similar to what I grew up on....ours usually had garlic, onion, parsley and sometimes pumpkin mashed through.

Mashed potato with onion and pumpkin will be a bit like hutspot. Though hutspot will be a bit more smooth, because of the structure of the carrots.

Re pumpkin vs carrots in Hutspot, I think it would be the carrots that would be more chunky. Mashed pumpkin is pretty smooth. We've always used Butternut or Jap pumpkins.
We keep a tub of do-it-yourself garlic margarine (freshly-crushed garlic and lots of dried parsley flakes) in the fridge along with the regular margarine. The only problem is that, once made, it seldom lasts for more than a few hours. It's good in mashed potato, macaroni-and-cheese, scrambled egg, on sandwiches and toast... with damn-near anything, really.
I have to agree with you. My Mum used to do it with butter and fresh parsley, and my God, what a treat. I do make it from time to time, like she did, but yes, like you say, it goes well with everything. Too well! Hence why it's an occasional treat.
In a perfect world, I'd make it all the time, but I doubt that I'd fit through the door to go out and buy more garlic, parsley and butter!
