Is it better to peel turnips and rutabagas with a paring knife or a vegetable peeler? When I use a knife I lose a lot of the inside, but my instinct tells me that if it "pops" off with the peel, it's probably woody. But if I use a peeler then I would have more turnip, but maybe more stringy flesh.
Bear in mind that turnips aren't a common veggie in New Orleans and it's a little tricky to find them, so I don't have them often, although I like them very much.
