Company provided lunch of pulled pork Barbeque, Rice and Hash, with sides of Cole Slaw and Potato Salad.  One of the guys at work is an accomplished Barbecue Pit Master, which is very much an art form in it's own right. --And yes, the Pig was slow roasted over hickory coals, no cheating with using propane.

Dammit, now I'm hungry.

I'd like to state further that the choices for BBQ sauces were a vinegar and pepper base which is popular in Eastern North Carolina and coastal South Carolina, and sauce with a prepared Mustard base that is common to central South Carolina. --None of that KC Masterpiece bullshit.

That sweet-hot mustard BBQ sauce?

God Damn! I love that stuff!

Yeah, fuck Maurice's though, He wants way too much for his product, and he supports some really flakey causes . You can get the same sauce that we were using from this place instead. http://www.shealysbbq.com/

I've been to their restaurant many times, and it is really good.

Awesome, thanks.
I'll bet they are not offering their recipe, though, right? I may have to order some, some day. I haven't had any of the good stuff since I left Tennessee. I have tried to make my own, but I can only go by smells when I cook and I can't quite get the mix right. I would love some really good sweet-hot BBQ.

Try this for cheap eats:

3 pounds dry Garbanzo beans, soaked over night, and simmered for 4 hours, and drained, then mashed.

Add to this 2 lbs Tahini ( NOT TAHINI DRESSING!!!!) that has been spiced with:

1 bulb of Garlic, minced
1 to 2 heaping teaspoon(s) of ground Cumin powder
1 heaping teaspoon Ground Cayenne pepper
Juice and pulp ( NO SEEDS!) of 3 pounds fresh lemons
2 to 2.5 additional cups of lemon juice
1 cup of olive oil

You can get tahini quite cheaply at an Arab market. Beirut brand is highly recommended by myself.

blend the above ingredients and then blend this mixture with the mashed Garbanzo beans. Serve this with fresh tomatoes, fresh cucumbers, pickles and brined olives, and pita breads sliced into wedges.

Your large quantity of Hummous can be kept for about 2 weeks in a cold refrigerator.
