A friend of mine cleaned and reassembled some deer and raccoon skeletons. She wrote about it on LiveJournal but I just checked and the posts were all marked friends only.
I don't know the process, but apparently it's not that hard. There are things called carrion beetles that you can use to eat off all the gunk around the bones, and then soak the bones in a hydrogen peroxide solution to bleach them.
You could also sell the furs.
